Scopa was born from a simple idea, to return to the essentials.
In a world where everything moves fast, where products are often standardized, we wanted to do the opposite. To take the time to do things right. To focus on what truly matters: taste, quality, and precision.
It all started with an obsession : quality of bread.
Not just a base, but the foundation of everything. Hundreds of tests, adjustments, and re-evaluations, until we achieved a perfectly balanced focaccia crispy on the outside, light and soft on the inside.
Then came the ingredients.
A rigorous selection, directly inspired by Italy, with a simple requirement: to keep only what truly adds something to the dish. The right ingredients, prepared with precision, without any unnecessary extras.
